🍳ITALIAN SHAKSHUKA🇮🇹

Or as the Italians call it, eggs in purgatory. Fuck knows why they called it that. There’s no suffering for your sins with this breakfast. It’s just pure heaven.

INGREDIENTS

1 onion
3 cloves garlic
1 can chopped tomatoes
Salt
Pepper
Oregano
Fresh basil
Mozzarella
Parmesan
3 eggs
Olive oil

METHOD

Start out by finely dicing your onion. The finer the better. Then do the same to 3 cloves of garlic.

Olive oil in a pan over medium heat and cook the onion until it’s as soft as Joey Barton’s head before adding the garlic.

Add a can of chopped tomatoes in and stir to combine.

Add a big pinch of salt, a tablespoon of oregano and a dash of pepper.

Add some fresh basil leaves to give it that gorgeous pizza sauce flavour then make some wells for your eggs.

Crack them in and add a load of mozzarella..

Get a load of Parmesan on there and put it under the grill until the cheese melts. Be careful not to overcook your yolks here. You want them nice and gooey, not hard and sad.

A bit more Parmesan because you are a fucking legend and enjoy.
