STEAK, CHILLI AND CHEESE PIE 🥧

Spicy, rich, soft tender meat with an oozing cheese centre. They sell this pie at Old Trafford so you can eat it while you watch United lose. But if you don’t want to go and witness that shitshow, here’s the recipe for home.

INGREDIENTS

1 Onion
1 Carrot
1 Stick celery
1 Red chilli (or more if you like it spicy)
4 cloves garlic
1kg Beef shin (or any slow cookable beef)
1 tbsp chilli flakes
1 tbsp thyme
1 tbsp cumin
1 tbsp paprika
1 tbsp chilli powder
1 tbsp cayenne pepper
1 tbsp oregano
1 tbsp pepper
1 tbsp tomato paste
500 ml beef stock
Dash of Worcestershire sauce
Salt and sugar to taste
Puff pastry sheet
Cheese
Butter (to lube your pie tin)
1 egg (for wash)

METHOD

Finely dice an onion, a carrot, a stick of celery, a chilli, and 4 cloves of garlic.

This is going to be your base.

Sweat it down in olive oil until it’s soft and your kitchen smells absolutely fucking sensational.

Then add a kilo of meat.

Add all your seasonings.

Add a squirt of tomato paste and mix before throwing in 500ml of beef stock.

A dash of Worcestershire sauce and you can leave that to cook low and slow for 3 hours.

Once the meat is melting into the sauce, shred it with a couple of forks. Add it back into the sauce and season with salt and a dash of sugar then stir it up.

Now it’s time to actually make the pie.

Lube the tin with butter and put the pastry in.

Layer up your meat with cheese and more meat. Put its little pastry hat on and seal with an egg wash. Put a hole in it so it doesn’t explode and get it in the oven on 200 for 25 mins.
