🇨🇳BIANG BIANG NOODLES🥡
These are without question the best noodles in the world. Sweet, spicy, salty, smooth and packed with flavour.
INGREDIENTS
1 bunch spring onions
6 cloves garlic
1 handful coriander
1 inch ginger
2 tbsp chilli flakes
1 tbsp peanut butter
1 tbsp sesame seeds
1 pinch sugar
3 tbsp soy sauce
3 tbsp apple cider vinegar
Oil
Noodles
METHOD
Chop up 6 cloves of garlic into unfathomably small little bits then chop up a whole bunch of spring onions and a big handful of coriander.
Traditionally you make the noodles yourself but fuck that just get some long thick pasta like tagliatelle or whatever this is.
While that cooks, fry everything in a good splash of oil. Starting with your spring onion then the garlic. Grate in a little nob of ginger and then 2 tablespoons of chilli flakes.
Let those ingredients shag each other senseless in the pan for a minute or so before adding 3 tablespoons of soy sauce, followed by 3 tablespoons of apple cider vinegar.
Then a bit fat dollop of peanut butter.
Stir that in til its all combined, then add sesame seeds. Chuck in that coriander, then add a big pinch of sugar.
We’re going to turn that into a smooth sauce with a couple of ladles of the noodle water so it emulsified, ready to coat the noodles in all that outrageous flavour.
Toss until they’re dripping with it and then serve.
It literally takes 15 minutes and I promise you, your jaw will be on the floor after trying one bite of this.
