🥡STICKY BRAISED CHINESE PORK BELLY🐷
Little tender bites of absolute heaven. It takes very little actual prep time. You just stick a few ingredients in a pot and wait for the magic to happen.
INGREDIENTS
1.2kg Pork belly
2 shallots
2 inches ginger
4 cloves garlic
4 tbsp soy sauce
3 tbsp dark soy sauce
3 tbsp rice wine
Oil
Spring onion
Sesame seeds
METHOD
First off finely dice a couple of shallots then stick them in a bowl to one side.
Then get your pork belly and take the skin off. We don’t need that part as it won’t render down to become soft.
Slice it into chunks and then boil it for a couple of minutes until Leeds scum starts to form on the top. Skim that off and then take the pork out but save the water.
Oil in a hot deep pan and fry the pork until it starts to turn a lovely brown colour. This should take about 5 minutes.
Then you’re going to add your shallot, grate in about a thumb of ginger and 4 cloves of garlic. Add 2 tablespoons of brown sugar. Then 3 tablespoons of dark soy sauce and rice wine. And 4 tablespoons of light soy sauce.
Top it up with the pork water from earlier until it’s totally covered, then cover and simmer for 2 and a half hours.
Then crank up the heat to thicken up and reduce the sauce.
Then you’re ready to serve on a bed of rice with some spring onion and toasted sesame seeds.
This is a more traditional Chinese dish. I’ve not really seen it on many takeaway menus but if you love Asian flavours, then this one is an absolute must try.
